Moroccan Spinach ---------------- 1/2 cup water 1 dried red chilli 3 cloves Garlic, minced 1 large Spanish Onions, chopped 1 teaspoon ground black pepper 2 teaspoons cumin 1 lb chick peas/garbanzo beans (cooked weight) 1 lb Spinach 4 large dried peaches (can use apricots) sufficient tomato puree to thicken In a large pan bring the water to the boil. Add the garlic, onion, black pepper and cumin. Simmer with a lid on for five minutes. Add the dried red chilli and the chick peas. Leave to simmer for about 5 minutes. Cut the dried peaches up into tiny pieces and add to the pan. Now add the shredded spinach and simmer till the spinach reduces down. Add the tomato puree. Simmer for another couple of minutes till the the mixture has thickened. Serve over steamed wholegrain couscous.
