The Base: ========= Four different versions, depending upon timescales: 1. Flat round Pitta breads from the shop (quick and easy) 2. Traditional Yeasty base (slow but sure) 3. Baking powder base (quicker but quixotic, necessary for yeast free diets) 4. Pre-made vegan pizza bases from Sainsburys or Safeways. I shall give you my recipe for no. 2. 3 is similar but I haven't made it for a while and I make it up as I go along. 4. is what I usually use! 1/2 teaspoon dried yeast 2/3 cup warm water 2 cups whole wheat flour 1 tablespoon vegetable oil optional bits salt, pepper, herbs (basil/oregano) Mix the yeast with the water and leave till frothy. Add yeast mixture to flour, make a dough, add the oil and seasonings. Knead till knackered (about 5 minutes should do it). Leave in a warm spot till doubled in size. Roll out 4 *thin* circles. Place on greased baking sheets and leave for another 20 minutes. Bake in the oven for about 5 minutes. This makes quite a thick crust. Don't leave it as long if you want a thin crust. The Sauce: ========== Now this is the bit where almost anything goes. All you have to remember is to swear at the mixture in Italian and make sure it is *thick*. Here's a mixture I have made up while typing this in: 2 cloves garlic 1 chopped onion 1 medium courgette/zucchini 2 tablespoons VIRGIN Olive Oil Fry the above *uncovered* till soft. Add: 1 can chopped tomatoes 1/2 cup sweetcorn/corn 2 teaspoons oregano 1 teaspoon rosemary Now cook the mixture *uncovered* till it is reduced. Add: 2 tablespoons tomato puree to thicken Leave this mixture to cool. I normally stick it outside for half an hour, but that obviously depends on where you live! The Bits: ========= Again this is a bit where anything goes. The only rule is that nothing should be runny. I normally put on some or all of the following, depending on what is to hand. There are no quantities listed, use your imagination! grated hard vegan cheese sliced green, red, and yellow peppers sliced large mushrooms artichoke hearts, halved pine nuts green and black olives (yuck! but the wife likes 'em) dried herbs olive oil black pepper NO pineapple!!!!-) Make sure you stick the Olive oil on last. Oh by the way if you hadn't guessed all this goes onto the bases you made above! Cook in a hot oven (about 200/400 degrees) for about 20 minutes.
