Here is a recipe for GADO GADO, an Indonesian peanut sauce, modified slightly for western produce: 2 teaspoons Vegetable Oil 3 cloves Garlic, crushed 1 large Finely chopped onion 1 Medium Red Chilli 2 Medium Green Chillies a bit(?) Fresh Ginger, crushed Fry the above with the lid on until tender. Then add: 1 cup Smooth Peanut Butter (lots and lots of luverly fat!!!-) wait until the peanut butter has melted. Then add: 3 cups Vegetable Stock, preferably a rich dark stock 1 teaspoon Chilli Powder (more or less, depending on masochism level) 2 teaspoons Black Pepper (more or less, depending on masochism level) leave to simmer for 15 minutes, then add: 40ml Lemon Juice (about one lemon, but you may like more) 1/2 cup Soya Milk (optional for those gagging veggies) Make sure you don't add too much stock or Soya Milk such that the consistency comes out too runny. When you start adding the stock the sauce will actually thicken (just like a white sauce). The original recipe I took this from also had sugar, but I just buy cheap peanut butter which normally has sugar in, or use a sweetened Soya Milk, The original recipe is from a book called the "Compassionate Gourmet", all the dishes in it are Vegan and it is definitely a must have recipe book for Vegans, especially if you want to entertain guests. I normaly serve this draped over steamed vegetables. Try broccoli, cabbage, cauliflower, carrots, kale, sweetcorn/corn (which I often just stick in the above sauce) and green beans. My wife gets me to make a thick version of this sauce (with corn) and then stuff it into vol-au-vents for parties, almost everybody loves it, though a few suffer fits from all the chillies, garlic and ginger. You can also use this sauce with fried Tofu, though that would seem like a bit of a protein overdose to me. I also vary the ingredients slightly and turn this into a peanut soup, again too rich for many people but quite an experience!
