Bhindi Bhaaji ------------- 1 large Spanish onion 2 cloves Garlic 1/2 teaspoon Turmeric 3 tablespoons vegetable oil AND 1 teaspoon Black Mustard Seeds OR 3 tablespoons mustard oil bit of salt 1 teaspoon cayenne pepper OR 1 fresh red chilli pepper 1 tablespoon Tomato Puree/Paste 1/2 cup Water 1 lb baby okra Fry the finely chopped onion with the minced garlic, turmeric, mustard seeds and red chilli in the oil. Add the tomato puree and a little water and cook till well mixed and thickening. Add the whole okra and leave for about fifteen minutes. Add salt if necessary. Serve over rice.
