My favourite salad recipe is: 1 lb cooked and cooled Kidney Beans 1 lb cooked and cooled Chick Peas/Garbanzo Beans 1 lb cooked and cooled sweet corn/corn 2 large green peppers/capsicums 1 large red pepper/capsicum 1 large yellow pepper/capsicum 1 green lettuce OR 1 lb cooked and cooled asparagus OR 1 lb steamed artichoke hearts OR 1 lb cooked and cooled green beans/runner beans 1 large Avacado 1 small white onion (optional) Dressing: 1/4 cup Red Wine Vinegar or Cider Vinegar 1/4 cup Lemon Juice 1/4 cup Extra Virgin Olive Oil 1 tsp Salt 1 tsp Pepper 2 cloves Garlic 1 tsp Mustard Powder Combine the beans with the corn. Chop the peppers into small segments and add. Add *one* of: finely chopped lettuce, quartered artichoke hearts, sliced avacado, asparagus pieces, or chopped runner beans. Add a finely chopped onion if your constitution can stand it (my wife's can't). For the dressing mince the garlic and whizz in the other ingredients. Pour over the salad, refrigerate for about an hour before serving.
